Ingredients

  • 500 g lean ground beef
  • 1 medium onion, chopped
  • 2 medium carrot, diced
  • 2 celery sticks, diced
  • 2 garlic cloves, minced
  • 2 tbsp tomato paste
  • 250 ml low-sodium beef broth
  • 1 tbsp Worcestershire sauce
  • 150 g frozen peas
  • 1 tsp fresh thyme leaves
  • 1 tsp fresh rosemary, chopped
  • 1 kg potatoes, peeled and chopped
  • 150 ml low-fat milk
  • 1 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper, freshly ground

Directions

Step 1

Preheat oven to 200°C (390°F).

Step 2

In a large skillet over medium heat, add the olive oil and sauté the chopped onion, diced carrots, celery, and minced garlic until the vegetables are soft, about 5-7 minutes.

Step 3

Increase the heat to medium-high, add the lean ground beef to the skillet, and cook until browned, breaking it up with a spoon, about 8-10 minutes.

Step 4

Stir in the tomato paste, cooking it for a minute, then pour in the beef broth and Worcestershire sauce. Add the thyme and rosemary. Bring the mixture to a simmer and cook for another 15 minutes or until the sauce thickens. Stir in the frozen peas and season with salt and black pepper.

Meanwhile, place the chopped potatoes in a large pot of boiling salted water. Cook until tender, about 15-20 minutes, then drain well.
