Ingredients

  • 6 slices Whole wheat sandwich bread
  • 200 grams Lean ground beef (90% lean)
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 large Tomato
  • 0.5 medium Cucumber
  • 4 large leaves Lettuce leaves
  • 2 tablespoons Mustard
  • 2 tablespoons Low-fat mayonnaise
  • 1 teaspoon Olive oil spray

Directions

Step 1

Start by preparing the vegetables: slice the tomato into thin slices and the cucumber into thin rounds. Wash the lettuce and pat dry with a paper towel. Set aside.

Step 2

In a medium bowl, combine lean ground beef with salt and black pepper. Mix well using your hands or a fork until thoroughly combined.

Step 3

Preheat a non-stick skillet over medium heat. Lightly spray with olive oil spray.

Step 4

Divide the beef mixture into 2 equal portions and shape them into thin patties, roughly the same size as a slice of bread.

Step 5

Place the patties in the preheated skillet and cook for about 4-5 minutes on each side, or until they are browned and cooked through.

Step 6

While the patties are cooking, lightly toast the whole wheat bread slices using a toaster or an oven until they are golden brown and crisp.

Step 7

In a small bowl, mix together the mustard and low-fat mayonnaise. Spread this mixture evenly on one side of each toasted bread slice.

Step 8

To assemble each club sandwich: place a lettuce leaf on one slice of the prepared bread, add one beef patty, a few slices of tomato, and cucumber. Top with another bread slice (with mustard-mayo spread), repeat with more layers as desired, and finish with a final piece of bread.

Step 9

Secure each sandwich with toothpicks at each corner, if necessary, to keep them together.

Step 10

Slice each sandwich diagonally into two triangles and serve immediately.
