Ingredients

  • 250 grams Lean ground beef
  • 1 tablespoon Low-sodium taco seasoning
  • 60 milliliters Water
  • 150 grams Baked tortilla chips
  • 100 grams Low-fat shredded cheddar cheese
  • 100 grams Diced tomatoes
  • 2 tablespoons Sliced jalapeños
  • 2 tablespoons Chopped green onions
  • 2 tablespoons Fresh cilantro leaves
  • 60 grams Low-fat sour cream
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Heat a non-stick skillet over medium heat. Add the lean ground beef and cook until browned, breaking it up with a spatula as it cooks, about 5-7 minutes.

Step 2

Drain any excess fat from the skillet, then add the taco seasoning and water. Stir well to combine and let it simmer for 2-3 minutes, stirring occasionally, until the beef is coated and the mixture thickens.

Step 3

Preheat your oven to 200°C (400°F).

Step 4

On a large baking sheet, spread the baked tortilla chips evenly. Top the chips with the seasoned beef mixture, followed by the shredded low-fat cheddar cheese.

Step 5

Place the baking sheet in the preheated oven and bake for about 5 minutes or until the cheese is melted and bubbly.

Step 6

Remove the nachos from the oven and top them with diced tomatoes, sliced jalapeños, chopped green onions, and fresh cilantro leaves.

Step 7

Season with salt and black pepper, adjusting to taste.

Step 8

Serve the nachos hot, with low-fat sour cream on the side for dipping or drizzling.
