Ingredients

  • 250 grams All-purpose flour
  • 7 grams Dry active yeast
  • 150 ml Skim milk
  • 100 grams Low-fat Greek yogurt
  • 60 ml Honey
  • 50 grams Sugar
  • 5 ml Vanilla extract
  • 2 grams Salt
  • 1 large Egg
  • 50 grams Sliced almonds
  • 40 grams Low-fat vanilla pudding mix
  • 250 ml Water

Directions

Step 1

In a small saucepan, warm 150ml of skim milk until lukewarm. Remove from heat and sprinkle over the yeast. Let it sit for about 5 minutes until foamy.

Step 2

In a large bowl, mix flour, 25 grams of sugar, and salt. Create a well in the center and pour in the yeast mixture, Greek yogurt, and the egg. Mix everything into a soft dough.

Step 3

Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Place in a lightly greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour or until doubled in size.

Step 4

While the dough is rising, prepare the topping. In a small saucepan, combine 60ml of honey, vanilla extract, and 25 grams of sugar. Stir constantly over medium heat until the sugar is dissolved. Stir in sliced almonds and mix well. Set aside to cool slightly.

Once the dough has risen, preheat your oven to 180°C (350°F). Roll the dough into a round disc and place it in a greased 23cm (9-inch) springform pan.

Spread the vanilla pudding evenly over the bottom layer of the pastry, then cover with the top layer.
