Ingredients

  • 250 grams Green beans
  • 50 grams Grated coconut
  • 0.25 teaspoon Turmeric powder
  • 0.5 teaspoon Mustard seeds
  • 0.25 teaspoon Cumin seeds
  • 2 pieces Dry red chilies
  • 8 leaves Curry leaves
  • 1 medium Onion
  • 2 cloves Garlic cloves
  • 0.5 teaspoon Salt
  • 50 milliliters Water
  • 2 teaspoons Oil

Directions

Step 1

Wash the green beans thoroughly. Trim the ends and chop them finely.

Step 2

Peel and finely chop the onion. Mince the garlic cloves.

Step 3

In a large non-stick pan, heat 2 teaspoons of oil over medium heat.

Step 4

Add mustard seeds to the pan. Once they begin to splutter, add cumin seeds, dry red chilies, and curry leaves.

Step 5

Add chopped onions and garlic to the pan. Sauté until the onions turn translucent.

Step 6

Mix in the chopped beans and turmeric powder. Stir to combine everything evenly.

Step 7

Add 50 ml of water and salt to the beans. Cover the pan with a lid and cook for about 10 minutes, stirring occasionally, until the beans are cooked and tender.

Step 8

Once the beans are cooked, add the grated coconut and mix well. Cook for another 2-3 minutes without the lid, allowing excess moisture to evaporate.

Step 9

Remove from heat and transfer the Beans Thoran to a serving dish.

Step 10

Serve hot as a side dish with rice or Indian breads.
