Ingredients

  • 15 oz can canned black beans
  • 15 oz can canned pinto beans
  • 2 cups reduced-sodium enchilada sauce
  • 8 small whole wheat tortillas
  • 1 medium, finely chopped onion
  • 1 medium, finely chopped red bell pepper
  • 2 cloves, minced garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 tablespoon olive oil
  • 0.5 cup chopped fresh cilantro
  • 1 cup low-fat shredded cheese
  • 0.5 cup sliced green onions

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Drain and rinse the canned black beans and pinto beans.

Step 3

In a large skillet, heat olive oil over medium heat.

Add the chopped onion and red bell pepper to the skillet, sauté for about 5 minutes until they are soft.
