Ingredients

  • 4 pieces whole wheat tortillas
  • 1 cup canned black beans, rinsed and drained
  • 0.5 cup reduced-fat sharp cheddar cheese, shredded
  • 0.5 cup salsa
  • 0.5 cup diced bell pepper
  • 0.5 cup diced onion
  • 1 teaspoon olive oil
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon chili powder
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

In a large non-stick skillet, heat 1 teaspoon of olive oil over medium heat.

Step 2

Add the diced onion and bell pepper to the skillet. Sauté for about 5 minutes, or until the vegetables are tender.

Step 3

Add the black beans, cumin, chili powder, garlic powder, salt, and black pepper to the skillet with the vegetables. Stir well to combine and cook for another 3-4 minutes until the beans are heated through.

Warm the whole wheat tortillas in the microwave for about 10-15 seconds to make them more pliable.
