Ingredients

  • 4 pieces Whole wheat tortillas
  • 1 cup Canned black beans, drained and rinsed
  • 1 cup Canned refried beans, fat-free
  • 1 cup Low-fat cheddar cheese, shredded
  • 1 cup Salsa
  • 0.5 cup Chopped green onions
  • 0.25 cup Chopped fresh cilantro
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Ground black pepper

Directions

Step 1

Preheat a non-stick skillet over medium heat.

Step 2

In a mixing bowl, combine the black beans, refried beans, salt, and pepper. Use a fork or potato masher to mix and lightly mash the beans together, leaving some whole for texture.

Step 3

Place a tortilla on a flat surface and evenly spread about 1/2 cup of the bean mixture in a line down the center of the tortilla.

Step 4

Sprinkle 1/4 cup of shredded low-fat cheese over the bean mixture.

Step 5

Top with 2 tablespoons each of salsa, green onions, and cilantro.

Step 6

Fold in the sides of the tortilla and then roll it up from the bottom, creating a burrito.

Step 7

Repeat the process with the remaining tortillas and filling ingredients.

Step 8

Place the burritos seam-side down in the preheated skillet. Cook for about 2-3 minutes on each side, or until the tortillas are golden brown and slightly crispy.

Step 9

Serve the burritos warm, optionally garnished with additional salsa or cilantro if desired.
