Start by trimming excess visible fat from the pork belly. Cut the pork belly into 1-inch wide strips.
In a large mixing bowl, combine low-sodium soy sauce, calamansi juice, honey, minced garlic, ground black pepper, and paprika. Stir well until honey completely dissolves.
Add the pork belly strips into the marinade, making sure they are well-coated. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight to enhance the flavors.
Before cooking, preheat your grill to medium-high heat. Alternatively, you can use a stovetop grill pan or a broiler.
Remove pork from the marinade. Reserve the marinade and add 120 ml of water to it to make a glaze.
Lightly brush the grill with olive oil to prevent sticking. Place pork strips on the grill and cook for about 15-20 minutes, turning occasionally and basting with the glaze, until charred and cooked through.
Make sure to let the glaze simmer for a few minutes on a stovetop to reduce and thicken slightly, then use it to baste the meat for the last few minutes of grilling to add flavor and moisture.
Remove from the grill and let the BBQ Liempo rest for about 5 minutes before serving.
