  • 10 leaves curry leaves
  • 0.5 teaspoon salt
  • 2 tablespoons fresh coriander leaves

Directions

Step 1

Peel and slice the potatoes into thin wedges or cubes, about 1/4 inch thick.

In a large non-stick pan, heat 1 tablespoon of olive oil over medium heat.

Add mustard seeds and cumin seeds to the hot oil and let them crackle for about 30 seconds.
