Ingredients

  • 12 ounces Whole wheat pasta
  • 2 cups Cherry tomatoes
  • 1 cup Fresh basil leaves
  • 3 large Garlic cloves
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Freshly ground black pepper
  • 1 tablespoon Lemon juice
  • 0.25 cup Parmesan cheese, grated (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente. Reserve 1 cup of the pasta water, then drain the pasta.

Step 2

While the pasta cooks, halve the cherry tomatoes and set aside.

Step 3

Finely chop the garlic cloves.

Step 4

In a large skillet, heat the olive oil over medium heat. Add the garlic and sauté for 1-2 minutes until fragrant and lightly golden, making sure not to burn the garlic.

Add the cherry tomatoes to the skillet and cook for about 5 minutes until they start to soften and release their juices.

Step 6

Stir in the fresh basil leaves, salt, and pepper, and cook for another 1-2 minutes until the basil wilts.

Step 7

Add the drained pasta to the skillet with the tomato and basil mixture. Toss everything together, adding a little of the reserved pasta water to help coat the pasta evenly.

Step 8

Remove from heat and stir in the lemon juice. Adjust seasoning with more salt and pepper if needed.

Step 9

Serve hot, with grated Parmesan cheese sprinkled on top if desired.
