Ingredients

  • 2 large (ripe) Bananas
  • 0.5 cup Low-fat buttermilk
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 0.25 cup Unsweetened applesauce
  • 0.5 cup Brown sugar
  • 1.5 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly coat with non-stick spray.

Step 2

Peel and mash the ripe bananas in a medium mixing bowl until smooth.

Step 3

Add the low-fat buttermilk, egg, vanilla extract, unsweetened applesauce, and brown sugar to the mashed bananas, and whisk until well combined.

Step 4

In a separate large bowl, whisk together the all-purpose flour, baking soda, baking powder, ground cinnamon, and salt.

Step 5

Make a well in the center of the dry ingredients and pour in the wet banana mixture. Stir gently until just combined. Be careful not to overmix, as this could make the muffins dense.

Step 6

Divide the batter evenly among the prepared muffin cups, filling each about three-quarters full.

Step 7

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature. Store leftovers in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
