Ingredients

  • 500 grams Lean ground beef
  • 3 pieces Garlic cloves, minced
  • 2 pieces Egg whites
  • 2 tablespoons Cornstarch
  • 100 ml Ice water
  • 1 teaspoon Salt
  • 0.5 teaspoon White pepper
  • 1.5 liters Chicken broth
  • 3 pieces Scallions, chopped
  • 3 pieces Kaffir lime leaves
  • 1 large Carrot, thinly sliced
  • 200 grams Bok choy, chopped
  • 2 tablespoons Cilantro, chopped
  • 2 tablespoons Soy sauce, low sodium

Directions

Step 1

In a large bowl, combine the lean ground beef, minced garlic, egg whites, cornstarch, ice water, salt, and white pepper. Mix thoroughly until well incorporated and pasty in texture.

Step 2

Shape the mixture into small balls, about the size of a walnut, by using slightly wet hands to prevent sticking.

Step 3

In a large pot, bring the chicken broth to a simmer over medium heat.

Step 4

Add the meatballs to the pot in batches, carefully dropping them one by one, and simmer until they float to the surface, about 5-7 minutes per batch.

Step 5

Once all meatballs are cooked, add the sliced carrots, chopped bok choy, and kaffir lime leaves to the broth. Let it simmer for 10 minutes until vegetables are tender.

Step 6

Season the soup with low-sodium soy sauce and adjust the seasoning if necessary.

Step 7

Before serving, remove kaffir lime leaves, and garnish the soup with chopped scallions and cilantro.

Step 8

Serve hot and enjoy your low-fat Bakso Sapi!
