  • 300 grams whole-wheat penne pasta
  • 1 tablespoon extra virgin olive oil
  • 1 medium onion
  • 3 cloves garlic cloves
  • 400 grams crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon red pepper flakes
  • 100 grams baby spinach
  • 200 grams low-fat ricotta cheese
  • 100 grams grated low-fat mozzarella cheese
  • 0 to taste salt
  • 0 to taste ground black pepper

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

Bring a large pot of salted water to a boil. Add the whole-wheat penne and cook according to the package instructions until al dente. Drain and set aside.

While the pasta is cooking, chop the onion finely and mince the garlic cloves.
