Ingredients

  • 800 ml Low-fat milk
  • 20 whole Almonds
  • 10 strands Saffron strands
  • 4 pods Green cardamom pods
  • 2 tablespoons Sugar
  • 10 whole Pistachios
  • 100 ml Water

Directions

Step 1

Soak the almonds in hot water for 15 minutes. This will help in peeling off the skin easily.

Step 2

While the almonds are soaking, warm the saffron strands in a small bowl with 2 tablespoons of water to release the color and aroma.

Step 3

Once almonds are soaked, peel off the skin and place them in a blender along with 100 ml of water. Blend until a smooth paste is formed.

Step 4

Pour the low-fat milk into a saucepan and bring to a gentle simmer over medium heat, stirring occasionally to avoid burning.

Step 5

Add the almond paste and sugar to the simmering milk. Stir continuously to combine, allowing the mixture to thicken slightly.

Step 6

Crush the cardamom pods slightly in a mortar and pestle to release the seeds. Add these seeds to the milk.

Add the saffron water to the milk mixture. Continue to simmer for another 5-7 minutes, stirring occasionally.

Chop the pistachios finely or slice them using a knife.

Remove the saucepan from heat and let it cool down slightly. Pour the milk into serving glasses.
