Ingredients

  • 4 pieces Whole wheat tortillas
  • 8 slices Turkey bacon
  • 0.5 cup Low-fat ranch dressing
  • 2 cups Shredded lettuce
  • 1 cup Diced tomatoes
  • 1 cup Shredded reduced-fat cheddar cheese
  • 1 cup Black beans, drained and rinsed
  • 0.25 cup Red onion, thinly sliced
  • 0.25 cup Cilantro, chopped
  • 1 piece Jalapeño, thinly sliced (optional)
  • 1 piece Lime, cut into wedges

Directions

Step 1

Heat a non-stick skillet over medium heat. Cook the turkey bacon slices for 3-4 minutes on each side until crispy. Remove from skillet and set aside on a paper towel to drain excess fat.

Step 2

While the bacon is cooking, prepare the vegetables. Shred the lettuce, dice the tomatoes, and thinly slice the red onion and jalapeño if using.

Warm the whole wheat tortillas in the microwave for about 20 seconds or in a hot skillet for about 30 seconds on each side to make them pliable.
