Ingredients

  • 1 large Whole wheat tortilla
  • 2 slices Low-fat turkey bacon
  • 3 large Egg whites
  • 2 tablespoons Non-fat Greek yogurt
  • 2 tablespoons Low-fat shredded cheddar cheese
  • 1 handful Spinach leaves
  • 1 medium Tomato
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 dash Olive oil spray

Directions

Step 1

Heat a non-stick skillet over medium heat and lightly coat with a dash of olive oil spray.

Step 2

Add the turkey bacon slices to the skillet and cook for about 3-4 minutes each side until crispy. Remove and set aside on a paper towel to drain excess fat.

Step 3

While the bacon cooks, whisk the egg whites with salt and pepper in a small bowl.

In the same skillet, pour in the egg whites and scramble gently with a spatula until fully cooked, about 2-3 minutes. Remove from the skillet and set aside.

Slice the tomato into thin rounds and set aside.
