Ingredients

  • 4 pieces Whole wheat tortillas
  • 8 slices Turkey bacon
  • 6 large Egg whites
  • 1 medium Red bell pepper
  • 1 small Red onion
  • 2 cups Fresh spinach
  • 1 cup Low-fat cheddar cheese
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 spray Olive oil cooking spray
  • 0.5 cup Salsa

Directions

Step 1

Dice the red bell pepper and red onion, and set aside.

Step 2

Heat a non-stick skillet over medium heat and coat with olive oil cooking spray.

Step 3

Add the turkey bacon slices to the skillet and cook until crispy, about 3-4 minutes per side. Remove and chop into bite-sized pieces.

Step 4

In the same skillet, add the diced red onion and red bell pepper. Sauté until softened, about 2-3 minutes.

Step 5

Add the fresh spinach to the skillet and cook until wilted, about 1 minute. Remove the vegetables from the skillet and set aside.

Step 6

Wipe out the skillet, re-spray with olive oil cooking spray, and reduce the heat to low.

Step 7

Pour the egg whites into the skillet, and season with salt and black pepper. Scramble gently until the eggs are just cooked, about 2-3 minutes.

Warm the whole wheat tortillas in a separate non-stick pan over medium heat, about 30 seconds per side.

To assemble each burrito, place a warm tortilla on a flat surface. Sprinkle evenly with 2 tablespoons of low-fat cheddar cheese down the center. Top with a portion of scrambled egg whites, the bacon pieces, sautéed vegetables, and a couple of tablespoons of salsa.

Step 10

Fold the sides of the tortilla inwards over the filling, then roll from one end to the other to enclose the filling.

Step 11

Repeat with the remaining ingredients to make 3 more burritos.

Step 12

Serve immediately, with additional salsa on the side if desired.
