Ingredients

  • 2 whole wheat English muffins
  • 4 slices turkey bacon
  • 4 large egg whites
  • 1 spray non-stick cooking spray
  • 1 cup low-fat cheddar cheese
  • 1 cup fresh spinach

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Split the whole wheat English muffins and lay them on a baking sheet with the cut sides up.

Step 3

Spray a non-stick skillet with non-stick cooking spray and place it over medium heat.

Step 4

Add the turkey bacon slices to the skillet and cook for about 3-4 minutes on each side until they are golden brown and crispy. Remove the bacon from the skillet and set aside.

Step 5

In the same skillet, pour in the egg whites and scramble them gently over low heat until they are cooked through, but still soft. Remove from heat.

Step 6

Layer the bottom half of each English muffin with fresh spinach leaves.

Step 7

Add a layer of scrambled egg whites over the spinach.

Step 8

Place two slices of turkey bacon on top of the eggs on each muffin.

Step 9

Sprinkle about 2 tablespoons of low-fat cheddar cheese over the bacon.

Step 10

Close each muffin with its top half.

Step 11

Place the assembled muffins on the baking sheet and bake in the preheated oven for about 5 minutes or until the cheese has melted.

Step 12

Remove the muffins from the oven, let them cool slightly, and serve warm.
