Ingredients

  • 2 slices low-fat turkey bacon
  • 1 large egg
  • 1 low-fat cheddar cheese slice
  • 2 slices whole grain bread
  • 1 light spray cooking spray
  • 1 pinch salt
  • 1 pinch black pepper
  • 4 leaves spinach leaves
  • 1 teaspoon low-fat mayonnaise

Directions

Step 1

Heat a non-stick skillet over medium heat and apply a light coat of cooking spray.

Step 2

Add the turkey bacon slices to the skillet. Cook for 3-4 minutes on each side, or until they are crispy. Once cooked, remove from the skillet and set them aside on a paper towel to drain any excess grease.

In the same skillet, crack the egg. Cook for about 2-3 minutes, flipping halfway through, until the yolk is cooked to your liking. Season with a pinch of salt and black pepper.
