Ingredients

  • 2 pieces Whole grain English muffins
  • 4 slices Low-fat turkey bacon
  • 4 large Egg whites
  • 2 slices Low-fat cheddar cheese
  • 1 spray Non-stick cooking spray
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Place the two whole grain English muffins on a baking sheet and separate them into halves.

Step 3

Lightly spray a medium non-stick skillet with non-stick cooking spray and heat it over medium heat.

Step 4

Add the turkey bacon slices to the skillet and cook for about 3-4 minutes on each side until crispy. Once cooked, transfer the bacon to a paper towel-lined plate to drain excess fat.

Step 5

In a small bowl, whisk together the egg whites, salt, and black pepper.

Step 6

In the same skillet, pour in the egg white mixture and cook over medium heat, stirring gently, until it's just set but still slightly moist in about 3-5 minutes.

Step 7

Toast the English muffin halves in the oven for about 5 minutes or until lightly crispy.

Step 8

To assemble the sandwiches, place an English muffin bottom on a serving plate, top with a slice of cooked turkey bacon, half of the egg whites, and a slice of low-fat cheddar cheese. Place the muffin top over the cheese.

Step 9

Repeat the assembly process for the second sandwich.

Step 10

Serve immediately while warm and enjoy your low-fat bacon, egg, and cheese English muffin sandwiches!
