Ingredients

  • 500 grams Boneless, skinless chicken breast
  • 6 pieces Red chilies
  • 3 pieces Garlic cloves
  • 3 pieces Shallots
  • 1 piece Lemongrass stalk
  • 3 pieces Kaffir lime leaves
  • 2 centimeters Ginger
  • 1 teaspoon Turmeric powder
  • 1 piece Lime
  • 1 teaspoon Salt
  • 0.5 teaspoon White pepper
  • 1 tablespoon Canola oil
  • 100 milliliters Water

Directions

Step 1

Cut the chicken breast into bite-sized pieces and set aside.

Step 2

In a blender, combine the red chilies, garlic, shallots, ginger, and turmeric powder. Blend until you get a smooth paste.

Step 3

Remove the outer layers of the lemongrass and bruise the stalk with the back of a knife. Set aside.

Step 4

In a large non-stick pan, heat the canola oil over medium heat.

Step 5

Add the spice paste to the pan and stir-fry for 5 minutes until fragrant.

Add the bruised lemongrass, torn kaffir lime leaves, and continue to stir-fry for another 2 minutes.

Add the chicken pieces to the pan and stir until they are well coated with the spices.

Season with salt and white pepper. Pour in the water and stir well.

Cover the pan and let the chicken simmer over medium-low heat for 15-20 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened.
