Ingredients

  • 500 grams Skinless chicken thighs
  • 4 pieces Garlic cloves
  • 6 pieces Shallots
  • 5 cm piece Fresh turmeric root
  • 5 cm piece Ginger root
  • 3 leaves Kaffir lime leaves
  • 1 stalk Lemongrass stalk
  • 500 ml Low sodium chicken broth
  • 1 tablespoon Coconut palm sugar
  • 1 teaspoon Salt
  • 0.5 teaspoon White pepper
  • 1 tablespoon Fresh lime juice
  • 0 Cooking spray

Directions

Step 1

Begin by preparing the chicken thighs. Rinse them thoroughly under cold water and pat dry with paper towels.

Step 2

In a blender, combine garlic cloves, shallots, peeled turmeric root, peeled ginger root, and a small amount of chicken broth. Blend until a smooth paste forms.

Step 3

Trim and bruise the lemongrass stalk by using the back of a knife to soften it. Tie it into a knot to release its flavor during cooking.

Step 4

In a large nonstick pot, sprayed lightly with cooking spray, sauté the spice paste over medium heat until fragrant, about 3-4 minutes.

Step 5

Add the chicken broth, kaffir lime leaves, bruised lemongrass, coconut palm sugar, salt, and white pepper. Stir well to combine.

Step 6

Add the chicken thighs to the pot, ensuring they are submerged in the broth. Bring to a simmer over medium heat.

Step 7

Cover the pot and let the chicken cook for 30 minutes until tender and fully cooked.

Step 8

After cooking, remove the chicken pieces and set them aside, allowing some broth to cling to the pieces.

Step 9

Increase the heat to reduce the sauce for around 5–10 minutes, concentrating the flavors further.

Step 10

To finish the dish, lightly spray a non-stick skillet with cooking spray and quickly sear the chicken on high heat until lightly browned, around 1-2 minutes per side.

Step 11

Serve the Ayam Pop with a drizzle of lime juice and enjoy hot with steamed rice or a vegetable side.
