Ingredients

  • 500 grams Lean ground turkey
  • 3 cloves Garlic
  • 1 medium Onion
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Paprika
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Salt
  • 1 teaspoon Olive oil
  • 1 tablespoon Lemon juice
  • 4 pieces Whole wheat pita
  • 100 grams Lettuce
  • 1 large Tomato
  • 1 half Cucumber
  • 100 grams Low-fat yogurt
  • 2 tablespoons Fresh mint

Directions

Step 1

Finely mince the garlic cloves and onion. In a large mixing bowl, combine the garlic, onion, ground turkey, ground cumin, ground coriander, paprika, dried oregano, black pepper, and salt.

Step 2

Use your hands to mix the ingredients thoroughly until well combined.

Step 3

Shape the turkey mixture into a loaf form and wrap it tightly in plastic wrap. Refrigerate for at least 2 hours to allow the flavors to meld.

Step 4

Preheat your oven to 200°C (400°F). Lightly grease a baking tray with olive oil.

Step 5

Unwrap the loaf and place it on the prepared baking tray. Drizzle with lemon juice.

Step 6

Bake in the preheated oven for 25-30 minutes, or until the internal temperature reaches 75°C (165°F). Turn the loaf halfway through the cooking time for even baking.

Step 7

While the kebab cooks, prepare the sides. Thinly slice the lettuce, tomato, and cucumber. Finely chop the fresh mint.

Step 8

In a small bowl, mix the low-fat yogurt with chopped mint to create a refreshing sauce.

Step 9

Once the kebab is cooked, let it cool slightly, then slice thinly.

Step 10

Warm the whole wheat pita in the oven for a few minutes.

Step 11

Assemble the doner kebabs by layering slices of turkey kebab, lettuce, tomato, and cucumber in each pita. Drizzle with the mint yogurt sauce before serving.
