Ingredients

  • 1 cup Whole wheat berries
  • 0.5 cup Short-grain rice
  • 0.25 cup Dried chickpeas
  • 0.25 cup Dried white beans
  • 0.5 cup Dried apricots
  • 0.5 cup Dried figs
  • 0.5 cup Dried raisins
  • 0.5 cup Dried currants
  • 0.5 cup Walnuts
  • 2 tablespoons Pine nuts
  • 2 tablespoons Orange peel
  • 1 tablespoon Lemon peel
  • 0.5 cup Granulated sugar
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground cloves
  • 1 tablespoon Rose water
  • 0.25 cup Pomegranate seeds
  • 14 cups Water

Directions

Step 1

Rinse the whole wheat berries, chickpeas, and white beans separately. Soak them overnight in separate bowls of water.

Step 2

The next day, drain and rinse the soaked ingredients. Boil the wheat berries in a large pot with 10 cups of water for about 60 minutes until tender.

Step 3

In a separate pot, boil the chickpeas with 2 cups of water for 45-60 minutes until tender, and the same for the white beans. Once cooked, drain and set aside.

Step 4

Add rice to the pot with the wheat and cook for another 15 minutes, adding more water if necessary to keep the grains submerged.

Step 5

Chop the dried apricots and figs into small pieces. Add apricots, figs, raisins, and currants to the pot and cook for another 30 minutes, stirring occasionally.

Step 6

Stir in the cooked chickpeas and white beans, chopped nuts, orange and lemon peel, sugar, cinnamon, and cloves. Cook everything together for another 30 minutes.

Step 7

Add the rose water toward the end of cooking. Taste for sweetness, adjusting with more sugar if desired.

Step 8

Let the Asure cool slightly, then transfer it to serving bowls.

Step 9

Garnish each serving with pomegranate seeds and a sprinkle of pine nuts before serving. Serve warm or cold.
