Ingredients

  • 1 pound Whole wheat pizza dough
  • 2 cups Arugula
  • 1 cup Cherry tomatoes
  • 1 cup Low-fat mozzarella cheese
  • 2 tablespoons Parmesan cheese
  • 1 tablespoon Olive oil
  • 1 tablespoon Lemon juice
  • 1 teaspoon Garlic powder
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 475°F (245°C) and place a baking sheet or pizza stone in the oven to heat.

Step 2

Roll out the whole wheat pizza dough on a floured surface to your desired thickness. Transfer the rolled dough onto a piece of parchment paper.

Step 3

In a small bowl, mix the olive oil, lemon juice, garlic powder, dried oregano, salt, and black pepper until well combined.

Step 4

Brush the lemon-olive oil mixture over the rolled pizza dough, making sure to cover the surface evenly, leaving a small border around the edges.

Step 5

Evenly distribute the low-fat mozzarella cheese over the dough, followed by a smooth scattering of cherry tomatoes, halved.

Step 6

Carefully transfer the parchment paper with the pizza onto the preheated baking sheet or pizza stone in the oven.

Step 7

Bake in the oven for about 12-15 minutes, or until the crust is golden brown and the cheese has melted and bubbled.

Step 8

While the pizza is baking, toss the arugula with a light drizzle of olive oil and a pinch of salt in a medium bowl.

Step 9

Once the pizza is done, remove it from the oven and let it cool for a few minutes. Top the pizza with the fresh arugula salad and sprinkle with Parmesan cheese.

Step 10

Slice the pizza into 8 pieces and serve immediately. Enjoy your fresh and healthy low-fat arugula pizza!
