Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup dried apricots, chopped
  • 4 tablespoons low-fat cream cheese
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 tablespoon olive oil
  • 0.5 cup chicken broth (optional, for baking)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking dish with parchment paper or lightly grease it with cooking spray.

Step 2

Lay the chicken breasts flat on a cutting board. Using a sharp knife, carefully cut a pocket into the side of each breast, being careful not to slice all the way through.

Step 3

In a medium bowl, mix together the chopped dried apricots, low-fat cream cheese, minced garlic, and chopped parsley. Season with a pinch of salt and black pepper.

Step 4

Stuff each chicken breast with an equal amount of the apricot mixture. Secure the opening with toothpicks or kitchen twine to prevent the filling from falling out while cooking.

Step 5

Sprinkle the outside of each chicken breast with the remaining salt and pepper to season. Drizzle olive oil over the chicken for added moisture and flavor.

Step 6

If desired, pour the chicken broth into the bottom of the baking dish to keep the chicken moist during baking.

Step 7

Place the stuffed chicken breasts in the prepared baking dish and bake in the preheated oven for 25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

Step 8

Remove the chicken from the oven and let it rest for 5 minutes. Carefully remove the toothpicks or twine before serving.

Step 9

Serve warm with steamed vegetables, a side salad, or your favorite whole grain for a complete low-fat meal.
