Ingredients

  • 1.5 cups apple cider
  • 2 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoons ground nutmeg
  • 0.25 teaspoons salt
  • 0.5 cups unsweetened applesauce
  • 0.5 cups light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 0 non-stick cooking spray
  • 0.25 cup sugar
  • 1 teaspoon ground cinnamon

Directions

Step 1

Preheat your oven to 350°F (175°C). Spray a donut pan with non-stick cooking spray and set aside.

Step 2

In a medium saucepan over medium heat, reduce the apple cider to about 1/2 cup by simmering for approximately 10–15 minutes. Set aside to cool slightly.

Step 3

In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

Step 4

In another bowl, mix the applesauce, light brown sugar, egg, vanilla extract, and the reduced cider until fully combined.

Step 5

Pour the wet ingredients into the dry ingredients and gently fold together until no flour streaks remain. Be careful not to overmix.

Step 6

Spoon the batter into a large resealable plastic bag and cut one corner to create a piping bag. Pipe the batter into each cavity of the donut pan, filling about 3/4 full.

Step 7

Bake for 12–15 minutes, or until a toothpick inserted into the donut comes out clean.

Step 8

Remove the donuts from the oven and let them cool in the pan for 5 minutes. Then, transfer to a wire rack to cool completely.

Step 9

Mix the sugar and cinnamon in a small bowl. Once the donuts have cooled slightly, lightly coat them with the cinnamon sugar mixture.

Step 10

Serve and enjoy your low-fat apple cider donuts!
