Ingredients

  • 1 cup rolled oats
  • 1 cup whole wheat flour
  • 0.5 cup desiccated coconut
  • 0.5 cup brown sugar
  • 0.5 teaspoon baking soda
  • 2 tablespoons boiling water
  • 0.25 cup canola oil
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract

Directions

Step 1

Preheat your oven to 160°C (320°F) and line two baking trays with non-stick baking paper.

Step 2

In a large mixing bowl, combine the rolled oats, whole wheat flour, desiccated coconut, and brown sugar. Stir these dry ingredients together until they are well mixed.

Step 3

In a small bowl, dissolve the baking soda in the boiling water and set aside.

Step 4

In a small saucepan over low heat, combine the canola oil, honey, and vanilla extract. Warm gently, stirring occasionally, until the honey is melted and the mixture is smooth.

Step 5

Remove the saucepan from heat and add the dissolved baking soda mixture, stirring quickly as the mixture may foam up a bit.

Step 6

Pour the liquid mixture into the dry ingredients and mix thoroughly until completely combined.

Step 7

Take tablespoons of the mixture, roll them into balls, and place them on the prepared baking trays. Gently flatten each ball slightly with your fingers.

Step 8

Bake in the preheated oven for 10-12 minutes or until the edges of the cookies are a golden brown. Keep an eye on them to avoid overbaking.

Step 9

Remove the cookies from the oven and allow them to cool on the trays for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Serve these delicious low-fat ANZAC cookies with a cup of tea or as a light snack throughout the day.
