Ingredients

  • 300 g Mixed dried fruits (e.g., raisins, sultanas, dried apricots, chopped dates)
  • 250 ml Strong brewed black tea
  • 250 g Self-raising wholemeal flour
  • 1 tsp Baking powder
  • 1 tsp Ground cinnamon
  • 0.5 tsp Ground nutmeg
  • 1 large Egg
  • 100 g Unsweetened applesauce
  • 1 tsp Vanilla extract

Directions

Step 1

Place the mixed dried fruits in a medium bowl and pour the brewed black tea over them. Cover and let the fruits soak for at least 2 hours or overnight for optimal flavor.

Preheat your oven to 160°C (320°F) and line a loaf tin (approximately 2lb/900g size) with baking parchment.

In a large mixing bowl, combine the self-raising wholemeal flour, baking powder, ground cinnamon, and ground nutmeg.
