Ingredients

  • 1 cup All-purpose flour
  • 0.33 cup Unsweetened cocoa powder
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 0.5 cup Unsweetened applesauce
  • 0.33 cup Non-fat plain Greek yogurt
  • 0.33 cup Honey
  • 1.5 teaspoons Vanilla extract
  • 2 large Egg whites
  • 0.5 cup Non-dairy milk (e.g., almond or oat milk)
  • 0.25 cup Dark chocolate chips (optional, for topping)

Directions

Step 1

Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with paper cupcake liners.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt until well combined. Set aside.

Step 3

In a separate medium bowl, mix the unsweetened applesauce, Greek yogurt, honey, and vanilla extract until smooth. Then, whisk in the egg whites and non-dairy milk.

Step 4

Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to overmix.

Step 5

Divide the batter evenly among the 12 cupcake liners, filling each about 2/3 full. If desired, sprinkle a few dark chocolate chips on top of each cupcake for added flavor.

Step 6

Bake in the preheated oven for 16-18 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.

Step 7

Remove the cupcakes from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Step 8

Once cooled, serve and enjoy your low fat and low cholesterol chocolate cupcakes!
