Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cup unsweetened applesauce
  • 0.75 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 egg white
  • 1 cup whole wheat flour
  • 1 set alphabet cookie cutters

Directions

Step 1

Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a medium-sized bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.

Step 3

In a large mixing bowl, combine the unsweetened applesauce, granulated sugar, and vanilla extract. Beat in the egg white until the mixture is smooth and creamy.

Step 4

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the whole wheat flour until the dough comes together. You may need to use your hands to incorporate the last bits of flour.

Step 5

Divide the dough into two equal parts. Roll each portion of dough out between two pieces of parchment paper until it is about 1/4 inch thick.

Step 6

Use the alphabet cookie cutters to cut out various letters from the dough, transferring them carefully to the prepared baking sheets, spacing the letters about 1 inch apart.

Step 7

Bake in the preheated oven for about 8 to 10 minutes or until the edges start to turn golden. Be sure to rotate the baking sheets halfway through the baking time to ensure even cooking.

Step 8

Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Step 9

Enjoy your low fat alphabet cookies with a glass of milk or a cup of tea!
