  • 4 whole medium potatoes
  • 1 teaspoon cumin seeds
  • 1 teaspoon red chili powder
  • 1 teaspoon chaat masala

  • 2 tablespoons fresh coriander leaves
  • 1 cup low-fat yogurt
  • 3 tablespoons tamarind chutney
  • 3 tablespoons mint chutney
  • 1 small onion
  • 1 medium tomato
  • 1 tablespoon lemon juice
  • 1 serving cooking spray or 1 teaspoon of olive oil

Directions

Step 1

Peel and dice the potatoes into 1-inch cubes.

Step 2

Boil the potato cubes in salted water until tender but not mushy, approximately 10 minutes. Drain and set aside.

Heat a non-stick pan and lightly coat it with cooking spray or use 1 teaspoon of olive oil.
