Ingredients

  • 1.5 cups All-purpose flour
  • 0.5 cups Blanched almond flour
  • 0.25 cups Sugar
  • 0.25 teaspoons Salt
  • 0.33 cups Unsweetened applesauce
  • 1 teaspoons Almond extract
  • 0.25 cups Fat-free Greek yogurt
  • 1 large Egg white
  • 0.25 cups Sliced almonds
  • 1.5 teaspoons Baking powder

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the all-purpose flour, almond flour, sugar, salt, and baking powder. Mix well to ensure even distribution of the dry ingredients.

Step 3

In a separate mixing bowl, whisk together the unsweetened applesauce, almond extract, Greek yogurt, and egg white until smooth and well combined.

Step 4

Pour the wet ingredients into the dry ingredients and stir gently until a dough forms. Be careful not to overmix, as this can result in a tough pastry.

Step 5

Transfer the dough onto a lightly floured surface and roll it out into a rectangle about 1/4-inch thick.

Step 6

Sprinkle the sliced almonds evenly over the surface of the dough.

Step 7

Gently roll up the dough from the long edge to form a log, then cut the log into 8 equal pieces.

Step 8

Place each piece on the prepared baking sheet, cut side up, and gently press down to flatten slightly.

Step 9

Bake in the preheated oven for 18-20 minutes, or until the pastries are golden brown and firm to the touch.

Step 10

Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
