Ingredients

  • 1 cup Sugar
  • 0.25 cup Water
  • 0.5 cup Light Corn Syrup
  • 0.25 teaspoon Salt
  • 1 teaspoon Vanilla Extract
  • 1 cup Slivered Almonds
  • 0.5 teaspoon Baking Soda

Directions

Step 1

Prepare a baking sheet by lining it with parchment paper or a silicone baking mat.

Step 2

In a large saucepan, combine the sugar, water, light corn syrup, and salt.

Step 3

Place the pan over medium heat and stir constantly until the sugar has dissolved.

Step 4

Insert a candy thermometer into the pan and bring the mixture to a boil without stirring.

Step 5

Continue to cook the sugar mixture until it reaches a temperature of 300°F (149°C), also known as the hard crack stage.

Step 6

Remove the saucepan from the heat and quickly stir in the vanilla extract and slivered almonds.

Step 7

Immediately stir in the baking soda, which will cause the mixture to bubble. Stir just until well combined.

Step 8

Carefully pour the mixture onto the prepared baking sheet, spreading it out as evenly as possible with a spatula.

Step 9

Let the almond brittle cool completely at room temperature for about 30 minutes.

Step 10

Once hardened, break the brittle into small pieces and store it in an airtight container.
