  • 4 whole shallots

  • 1 inch piece ginger
  • 1 stalk lemongrass
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 0.5 teaspoon white pepper powder
  • 2 tablespoons lime juice
  • 1 tablespoon sweet soy sauce
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 100 milliliters coconut milk

Directions

Step 1

Begin by preparing the marinade. Peel the shallots, garlic, and ginger, then roughly chop them.

Bruise the lemongrass stalk by gently crushing it with the back of a knife.

Step 3

In a blender or food processor, combine the chopped shallots, garlic, ginger, bruised lemongrass, turmeric powder, coriander powder, white pepper powder, lime juice, sweet soy sauce, salt, and olive oil. Blend until you achieve a smooth paste.

Place the chicken thighs in a large mixing bowl. Pour the marinade over the chicken and toss to ensure each piece is well coated. Allow the chicken to marinate for at least 1 hour in the refrigerator. For best results, let it marinate overnight.
