Ingredients

  • 500 grams lean ground turkey
  • 1 small red bell pepper
  • 1 medium onion
  • 2 pieces garlic cloves
  • 20 grams parsley leaves
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 0.5 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Start by preheating your grill or oven to 200°C (about 390°F).

Step 2

Finely chop the red bell pepper, onion, garlic cloves, and parsley leaves.

Step 3

In a large mixing bowl, combine ground turkey, chopped red bell pepper, onion, garlic, parsley, ground cumin, paprika, red pepper flakes, salt, and black pepper.

Step 4

Mix everything together with your hands until fully combined. Be careful not to overwork the mixture as this can make the kababs tough.

Step 5

Divide the mixture into 8 equal parts and shape them into long, thin kababs around skewers or form into patties if you prefer.

Step 6

Brush each kabab lightly with olive oil to prevent sticking.

Step 7

Place the kababs on the preheated grill or in the oven if baking. Cook for about 10 minutes on each side, or until the kababs are cooked through and have nice grill marks, ensuring they reach an internal temperature of 74°C (165°F).

Step 8

Remove from heat and serve immediately with fresh salad or wrap in flatbread with sliced onions and sumac for a traditional presentation.
