Peel and dice the potatoes into small cubes, approximately 1-inch in size. Finely chop the onion and tomato. Slit the green chili lengthwise and finely chop the ginger.
Heat 1 teaspoon of mustard oil in a non-stick pan over medium heat. Once hot, add cumin seeds and let them crackle.
Add the chopped onions and sauté for about 3-4 minutes until they turn translucent.
Add the chopped ginger and green chili, sauté for another minute until the raw smell of ginger disappears.
Add the chopped tomatoes and cook until they become soft and mushy, stirring occasionally.
Stir in the turmeric powder, red chili powder, coriander powder, and salt. Cook for 1-2 minutes until the spices are well mixed.
