  • 0.25 cup parmesan cheese
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 cup chopped fresh spinach
  • 0.5 cup chopped red bell pepper
  • 2 stalks green onions, sliced

Step 1

Preheat the oven to 350°F (175°C). Grease a 12-cup muffin tin with cooking spray or line with silicone liners.

Step 2

In a large mixing bowl, whisk the egg whites until slightly frothy.

Add the low-fat cottage cheese, reduced-fat cheddar cheese, and parmesan cheese to the egg whites. Mix until well combined.

Step 4

Stir in the salt and black pepper for seasoning.

Fold in the chopped fresh spinach, chopped red bell pepper, and sliced green onions until evenly distributed.

Step 6

Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.

Step 7

Place the muffin tin in the preheated oven and bake for 25-30 minutes, or until the egg bites are set and lightly golden on top.
