Ingredients

  • 2 cups Almond flour
  • 2 tablespoons Coconut flour
  • 2 tablespoons Psyllium husk powder
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 4 large Eggs
  • 0.25 cup Greek yogurt (unsweetened, full-fat)
  • 2 tablespoons Olive oil
  • 3 tablespoons Za'atar spice blend
  • 1 teaspoon Sesame seeds (optional, for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine almond flour, coconut flour, psyllium husk powder, baking powder, and salt. Stir until evenly combined.

Step 3

In a separate bowl, whisk together the eggs, Greek yogurt, and olive oil until smooth and creamy.

Step 4

Gradually pour the wet ingredients into the dry ingredients. Stir until a dough forms. The mixture will be thick but pliable.

Step 5

Divide the dough into 8 equal portions. Roll each portion into a ball and flatten it into a disc, about 1/2 inch thick.

Step 6

Place the discs onto the prepared baking sheet, leaving space between each one.

Step 7

Sprinkle 1/2 tablespoon of za'atar spice blend onto each disc. Use your fingers to gently press the spice into the surface of the dough.

Step 8

If desired, sprinkle sesame seeds on top for added texture and flavor.

Step 9

Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and the tops are firm to the touch.

Step 10

Remove the za'atar bread from the oven and let them cool slightly on the baking sheet before serving.

Step 11

Serve warm or at room temperature. Enjoy with dips like hummus, labneh, or as a standalone snack!
