Ingredients

  • 8 slices Yellowtail (Hamachi) sashimi-grade fish
  • 1 cup Cauliflower rice (fresh or frozen)
  • 1 tablespoon Rice vinegar
  • 1 teaspoon Granulated erythritol or monk fruit sweetener
  • 0.25 teaspoon Salt
  • 0.5 teaspoon Wasabi paste
  • 2 tablespoons Soy sauce or tamari (for serving, optional)
  • 2 teaspoons Pickled ginger (garnish, optional)

Directions

Step 1

1. Prepare the cauliflower rice by cooking it in the microwave or steaming it until tender (about 3-5 minutes). Let it cool to room temperature.

Step 2

2. In a small bowl, combine the rice vinegar, granulated erythritol, and salt. Stir until the sweetener and salt dissolve.

Step 3

3. Mix the vinegar mixture into the cooled cauliflower rice, distributing it evenly to mimic the flavor of sushi rice. Adjust seasoning to taste if necessary.

Step 4

4. Using slightly wet hands, take about 1 tablespoon of the cauliflower rice mixture and form it into a compact, oblong shape to resemble a traditional nigiri rice base. Repeat for all 8 pieces.

Step 5

5. Place a small dab of wasabi paste onto the top of each cauliflower rice ball.

Step 6

6. Lay a slice of yellowtail sashimi over each rice ball, gently pressing it onto the rice base to hold it in place.

Step 7

7. Optionally, garnish with pickled ginger and serve with soy sauce or tamari on the side for dipping.
