Ingredients

  • 200 grams Shirataki noodles
  • 2 tablespoons Sesame oil
  • 3 whole Garlic cloves, minced
  • 1 teaspoon Ginger, grated
  • 1 large Red bell pepper, sliced thinly
  • 1 medium Zucchini, spiralized or julienned
  • 1 medium Carrot, spiralized or julienned
  • 1 cup Broccoli florets
  • 2 tablespoons Soy sauce or tamari (for gluten-free)
  • 1 tablespoon Rice vinegar
  • 0.5 teaspoon Chili flakes (optional)
  • 2 stalks Green onions, chopped
  • 1 teaspoon Toasted sesame seeds (optional)

Directions

Step 1

Rinse the shirataki noodles under cold water for 1-2 minutes. Drain well and set aside.

Step 2

Heat a large skillet or wok over medium heat and add 1 tablespoon of sesame oil.

Add the minced garlic and grated ginger to the skillet, sautéing for about 30 seconds until fragrant.

Toss in the broccoli florets, red bell pepper, zucchini, and carrot. Stir-fry the vegetables for 4-5 minutes until slightly tender but still crisp.
