Ingredients

  • 2 medium zucchini
  • 1 large carrot
  • 1 medium red bell pepper
  • 1 medium cucumber
  • 120 grams cream cheese (softened)
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 20 pieces toothpicks or small skewers

Directions

Step 1

Using a vegetable peeler or mandoline slicer, thinly slice the zucchini lengthwise into long ribbons. You should get approximately 20 ribbons. Set aside on a paper towel to remove excess moisture.

Step 2

Peel the carrot and use the peeler to continue creating thin ribbons. If the carrot is too narrow, cut small thin matchsticks instead. Set aside.

Step 3

Slice the red bell pepper into very thin strips about 2-3 inches long. Repeat the same with the cucumber.

Step 4

In a small bowl, mix the softened cream cheese with lemon juice, chopped fresh dill, salt, and black pepper. Stir until smooth and well combined.

Step 5

Lay a zucchini ribbon flat on a cutting board. Spread a thin layer of the cream cheese mixture along one side of the ribbon.
