Ingredients

  • 1 medium Zucchini (grated and squeezed of excess water)

  • 1 large Egg
  • 0.5 cup Cheddar cheese (shredded, optional for low-carb diets)
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Parsley (chopped, fresh or dried)
  • 2 tablespoons Olive oil (for frying)

Directions

Step 1

In a mixing bowl, combine the rolled oats and 1/4 cup of warm water. Let the oats soak for 5 minutes to soften.

Step 2

Add the grated zucchini, carrot, egg, shredded cheddar cheese (if using), garlic powder, onion powder, salt, black pepper, and parsley to the soaked oats. Mix well until combined.
