  • 1 small head Cauliflower
  • 1 small head Broccoli

  • 1 cup Grated Parmesan cheese
  • 1 cup Shredded mozzarella cheese
  • 3 cloves Garlic
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Ground black pepper
  • 0.25 teaspoon Nutmeg
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Thinly slice the zucchinis into 1/4-inch rounds using a knife or mandoline.

Cut the cauliflower and broccoli into small florets.

In a large pot, bring water to a boil. Add the cauliflower and broccoli florets, and blanch for 3-4 minutes until slightly tender but still crisp. Drain and set aside.
