Ingredients

  • 2 cups Cauliflower florets
  • 0.5 cups Almond flour
  • 2 tablespoons Coconut flour
  • 0.5 cups Grated zucchini
  • 2 large Eggs
  • 1 tablespoon Olive oil
  • 1 teaspoon Baking powder
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 tablespoon Sesame seeds (optional, for topping)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

Place the cauliflower florets in a food processor and pulse until they form a rice-like consistency.

Step 3

Transfer the riced cauliflower to a microwave-safe bowl and microwave for 3-4 minutes or until softened. Let it cool slightly, then place it in a clean kitchen towel and squeeze out as much moisture as possible.
