  • 80 g unsweetened almond butter
  • 120 ml coconut milk (full-fat, canned)
  • 45 ml tamari (gluten-free soy sauce)
  • 15 ml lime juice
  • 1 tsp fresh ginger
  • 1 clove garlic, minced
  • 15 ml coconut oil
  • 1 tsp erythritol or stevia (optional, for sweetness)
  • 1 tsp red curry paste (vegan and gluten-free)
  • 10 g fresh cilantro (for garnish)
  • 8 sticks wooden skewers (soaked in water for 30 minutes)

Directions

Step 1

1. Press the tofu for 15 minutes to remove excess water. Once pressed, cut the tofu into 1-inch cubes.

2. In a medium bowl, combine almond butter, coconut milk, tamari, lime juice, minced garlic, grated ginger, red curry paste, and optional erythritol. Whisk until smooth to create the marinade.
