Ingredients

  • 1.5 cups Chickpeas (cooked, rinsed, and drained)
  • 0.5 cup Almond flour
  • 2 tablespoons Ground flaxseed
  • 5 tablespoons Water
  • 2 tablespoons Nutritional yeast
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Smoked paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Coconut oil (or avocado oil) for greasing

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Lightly grease the parchment paper with coconut oil or avocado oil.

Step 2

In a small bowl, mix the ground flaxseed with 5 tablespoons of water to create a flaxseed 'egg.' Let it sit for 5 minutes to thicken.

Step 3

In a food processor, combine the chickpeas, almond flour, nutritional yeast, garlic powder, onion powder, smoked paprika, salt, and black pepper.

Step 4

Add the prepared flaxseed mixture to the food processor with the other ingredients.

Step 5

Pulse the mixture until it forms a sticky, moldable dough. Scrape down the sides of the processor as needed.

Step 6

Scoop out small amounts of the dough (about 1 to 1 1/2 tablespoons each) and shape them into nugget-sized pieces with your hands.

Step 7

Place the nuggets on the prepared baking sheet, evenly spaced apart.

Step 8

Bake the nuggets in the preheated oven for 25 minutes, flipping halfway through to ensure even cooking.

Step 9

Once golden and crispy on the outside, remove the nuggets from the oven and let them cool for a few minutes before serving.

Step 10

Serve warm with your favorite vegan dipping sauce and enjoy!
