Ingredients

  • 200 grams Cauliflower florets
  • 50 grams Almond flour
  • 2 teaspoons Psyllium husk
  • 2 whole Eggs
  • 3 tablespoons Full-fat yogurt
  • 2 tablespoons Ghee (clarified butter)
  • 20 grams Coconut flour
  • 1 teaspoon Salt
  • 0.5 teaspoons Turmeric powder
  • 0.5 teaspoons Red chili powder
  • 1 teaspoon Ginger-garlic paste
  • 0.5 teaspoons Mustard seeds
  • 6 leaves Curry leaves
  • 2 tablespoons Coriander (cilantro), chopped
  • 1 whole Green chili, minced
  • 2 whole Low-carb buns or keto almond flour buns
  • 2 tablespoons Keto-friendly green chutney
  • 2 tablespoons Keto-friendly garlic chutney

Directions

Step 1

Steam the cauliflower florets until tender, then mash them into a smooth, lump-free mixture.

Step 2

In a bowl, combine the mashed cauliflower, 1 tablespoon of almond flour, turmeric powder, red chili powder, ginger-garlic paste, and salt. Mix well to form a uniform dough for the filling.

Step 3

Heat 1 tablespoon of ghee in a pan. Add mustard seeds and curry leaves, allowing them to crackle. Add the spiced cauliflower mixture and sauté for 2-3 minutes. Remove from heat and let it cool.

Step 4

Shape the cooled cauliflower mixture into two round patties (vada). Set aside.

Prepare the almond flour batter for coating by mixing the remaining almond flour, coconut flour, psyllium husk, whisked egg, yogurt, and a pinch of salt to make a thick batter.

Heat another tablespoon of ghee in a pan over medium heat. Dip each cauliflower patty into the batter to coat it evenly, and then shallow fry in the pan until golden brown and crispy on both sides. Remove and set aside.

If using pre-made low-carb buns, toast them lightly in a dry pan. If making buns from scratch, bake them beforehand using almond flour as the base.

Spread keto-friendly green chutney on one side of each bun and garlic chutney on the other.

Step 9

Place one vada (cauliflower patty) in between the buns. Sprinkle with freshly chopped cilantro and finely minced green chili for extra heat, if desired.
