Ingredients

  • 2 tablespoons Coconut flour
  • 0.5 cups Granulated erythritol or monk fruit sweetener
  • 1 teaspoon Baking powder
  • 0.25 teaspoons Salt
  • 2 teaspoons Ube extract
  • 0.25 cups Unsalted butter, melted
  • 1 large Egg
  • 2 tablespoons Unsweetened almond milk
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, whisk together almond flour, coconut flour, erythritol, baking powder, and salt until well combined.

Step 3

In a separate medium bowl, whisk together melted butter, egg, ube extract, almond milk, and vanilla extract until smooth and evenly colored.

Step 4

Pour the wet ingredients into the dry ingredients and mix until a soft dough forms. The dough will be slightly sticky but firm enough to handle.

Step 5

Using a cookie scoop or your hands, form 12 equal-sized balls of dough and place them evenly spaced on the prepared baking sheet.
